What Are Grease Traps and Why Do You Need One?

Grease traps – also known as grease interceptors – are devices that extract FOGs (fats, oils and greases) from wastewater before it flows into a septic system or a municipal sewer system.

They are used most commonly in commercial establishments, such as hotels and restaurants where food is prepared. However, grease traps can be used effectively in other commercial or residential environments where waste water has a high concentration of FOGs, since they have a detrimental effect on septic or sewer systems into which water flows.

Many local authorities have imposed strict regulations concerning the amount of FOGs allowed in municipal waste water, and for many businesses, the use of grease traps is mandatory.

A grease trap works by routing wastewater through tanks (usually two), where it cools and stands for a while. This allows the contents to separate, with greasy, oily substances (solid or liquid) rising to the top because they are less dense than water. Particulate and solid matter that’s denser than water sinks to the bottom. Water can then flow out from the vertical (middle) part of the tanks where the water is at its purest. This drastically reduces the amount of FOGs entering a wastewater stream.

Sewers back up in the United States an estimated 400,000 times a year. The Environmental Protection Agency (EPA) says sewer pipe blockages are the main cause of sewer overflows, and FOGs are the leading cause of sewer blockages. That’s why virtually all municipalities require commercial kitchens to have grease traps.
